Pumpkin Pie Filling c. 2016 from Donna R. Dietz

5c extra firm tofu - crumbled
2/3 c honey
1/2t salt
1t ground ginger
2/3 c brown sugar
29 oz can solid pumpkin
2t ground cinnamon
1/8 t ground cloves
1/8 nutmeg

Process tofu, honey, 2T water in blender until smooth/creamy.
Add remaining items. Blend well. Pour into unbaked shells.
Bake 400F 1 hour until toothpick clean.
Cover crust edges after 30 min to prevent burning.

Cool.
