Donna's crunchy pancakes

This is a take-off on Michael's waffles.

1 c white flour
1 1/2 cup whole wheat pastry flour
3/4 cup wheat germ
1/2 c walnut meat (grid walnuts in spice grinder)
1/4 c ground quinoa
(be creative adding grains or ground nuts)

4 T corn oil
4 T maple syrup
4 T baking powder
4 cups soymilk (Donna doesn't cut with water)

electric fry pan (mine is set to temp 2 of 3 possible settings)

spray pan first
1/8 cup measuring cup to make small pancakes.

Top with fruit etc.

About 2650 Calories for this recipe

Makes 64 pancakes at about 42 Calories each... I think...

Serves about 6 to 8 people

It takes about an hour for cooking/flipping if I make 8 rounds of 8 pancakes at a time.

I made it today with mostly white flour but about half a cup of Farina, half cup of ground quinoa, half cup of ground cashews. Oat milk and soy mixed. I used it for waffles. I seem to need roughly a cup of mix per round in the new lego waffle maker. dd

Oh and. 6-8 people? I am lucky if I get any when I feed my 3 boys…. What people was I counting before? Hahaha I think it makes 4 to 5 sheets of waffle.

Following up… this worked a 2nd time. Use immersion blender, and do not overfill iron. Use chopstick to level the mix so it is level with the bottom iron. One sheet is about 1 1/3 cups, and that results in 5+ sheets, meaning like 5.3 sheets.
