Filling:
8 oz tempeh, sliced
1/2 eggplant, cubed
1 onion, sliced
1 sliced zucchini
Dressing:
2 T olive oil
2 T lemon juice
2 T salsa
1/2 t salt
1 T paprika
1/2 t chili powder
1 t oregano
Preheat oven to 400 deg F. Blend dressing ingredients in food processor. Toss dressing and filling in a large bowl; transfer to a greased glass baking dish. Bake for 45 minutes. Serve with corn tortillas, lettuce, and cheese.

Roasted potatoes and broccoli
3 medium potatoes
1/2 lb frozen broccoli
4 cloves garlic (sliced)
4 oz mushrooms (coarsely chopped)
4 Tofurky beer brat sausages, cut into coins
2 T olive oil
2 T soy sauce
2 T lemon juice
1/2 t salt
fresh ground pepper
Preheat oven to 400 deg F. Coarsely cube potatoes. Place ptatoes and broccoli on a pot, add water to cover. Bring to a boil. Simmer 5 minutes, drain. Whisk olive oil, soy sauce, lemon juice, salt, and pepper together. Toss the potatoes and broccoli with the dressing and remaining ingredients. Pour into a greased 9"x13" glass baking dish. Bake 50 minutes.

Mexican casserole
Sauce:
Layer ingredients in 13"x9" glass baking dish. Layer order:
- 1 can of plain tomato sauce
- 1/2 onion
- 3 cloves garlic
- 1 tsp cumin seed
- 1/2 tsp salt
- 4 T paprika
- 2 potatoes, peeled, boiled, mashed
- mushrooms
- 1 squash
- 1 cup shredded cheese
- 1 can beans
Layer ingredients in 13"x9" glass baking dish. Layer order:
- Tortilla
- Mashed potatoes
- 1/3 cup cheese
- 1/3 of the sauce
- Tortilla
- beans and squash
- 1/3 cup cheese
- 1/3 of the sauce
- tortilla
- remaining sauce and cheese

Cranberry Sauce
I've always loved yet hated cranberry sauce at Thanksgiving. This year, I win. So, I have to post this.
A bag of fresh cranberries (12 oz)
Rinse. Blend with a cup of water. Put in a pot with a cup of sugar.
Boil. Cut up 2 apples into little cubes. Add to boiling mix.
add about a quarter cup or so of yellow raisins. Chop some
walnuts. Maybe half a cup. I also had some ginger preserves, so I
chopped up maybe a third of a cup of those and dumped those
in!

Not So Adelle Davis... Wheat Germ Brownies
Starting with inspiration from Adelle Davis, but taking liberties....

1/4 c. corn oil
1 T molasses
7/8 c. sugar
1/2 c.chopped macadamia nuts (we were out of walnuts)
1 1/2 c. Genisoy Ultra XT Vanilla Soy Protein Shake Mix (from Wegman's)
(What good is a "Very Important" ingredient my husband can't eat???)

1 1/4 c. toasted wheat germ (then put through the spice grinder, measured after)
1/4 t salt
1/2 t baking powder (Yes, Mom. With Aluminium. Next Time....)
1/2 c. Hershey's Cocoa (Unsweetened, for Baking)
1/2 c. Chocolate Chips (Sunspire, grain sweetened)
8" pan 20-30-min @ 350 degrees (oiled pan first)
(But, I don't think it will burn easily, although it will dry out if you leave it in too long. There should be no dairy in this.)
After bringing it out of the oven, I smeared chocolate icing on top. Just regular cake frosting. (Betty Crocker Rich and Creamy. It might have dairy, but none is officially listed, so it would be small quantities.) Then, I topped this with sprinkles for the kids.
Ok, so the downside is I have no idea if this will work, but I figure with the chocolate chips, macadamia nuts, and frosting on top, what can possibly go wrong??? If there are no further posts, you can presume it's not horrible and not awesome. Either extreme would probably warrant a followup.
