3 eggplants
1/3c tahini
1 clove garlic
1/4 c parsley
1t salt
1/8-1/4c lemon juice
cook eggplant (Skinned, cubed) for 45min-1hour at 400F
Remove and puree or mash with other ingredients.
4-5 cups.
(I don't recall if the eggplant was covered while cooking!)
