Dressing:
3T olive oil
3T lemon juice
1/2 t salt
black pepper
Whisk all together.
Quinoa:
1/2 c quinoa
1 c corn
1.25 c water
1/2 t cumin
Boil together until water absorbed
Beans:
1 onion diced
1c black beans
cilantro
Fry that together.
Mix Dressing, Quinoa, Beans, feta (If desired), and 1-2 diced tomatoes.
