I may have eaten this while at a doula training session. (I trained but never used my training to become a doula, prior to Theodore's arrival, as a way of learning more about birth.) So this might be c. 2010?
Quinoa
tomatoes
cucumbers
corn
olive oil
lemon/salt
feta
sumac?
flaxseed oil?
You can roast the quinoa prior to cooking it with a dry pan, waiting until you hear "pops".
This adds a roasted taste to the dish.
